<p>A perfect cup of hot steaming coffee, the delicious smell of coffee along with the creamy froth brings a huge smile to everyone&#8217;s face. Every cup of coffee has its own identity; the flavour of coffee changes with the person making it, the steam coming for the cup has its own language of reaching people out. The art of coffee making is a gift given to few, and the ones who treasure it, live to create the magic of this divine poison.</p>
<p>Coffee people a part of Diedrich coffee family, provides the most popular traditional coffee beans and powder for any normal household. The initial marketing plan of the brand was to reach the common household. However, today with the help of Diedrich Coffee&#8217;s special coffee roaster, the brand creates spectacular blends to match the traditional recipes.</p>
<p>Coffee people initially had a huge market in Oregon, but after some time it got acquired by Diedrich family.  In 1983 the first coffee house of the brand was opened in Portland. </p>
<p>Today every location of Coffee people is bought out and changed in Starbucks, except for the Portland Airport. Diedrich family has successfully retained the full ownership of the brand inside Portland Airport.</p>
<p>Bold Coffee, Bold Personality, was one of the first marketing mottos used in the coffee market. I brought out a whole new dimension in marketing the traditional recipes. There are three different categories of coffees and they are K-Cups, Whole beans and bulk coffee. All these varieties are again available in different roasts starting from light, medium and dark. Coffee people have different merchandises like coffee cups and mugs, brewers, filters, vacuum tumblers with and without handle. </p>
<p>There are four stores of the brand at the Portland Airport and they are located at north concourse, concourse B, concourse C and Food court respectively.</p>

<p>This is the story of how the humble coffee becomes a world celebrity. It&#8217;s not about the Labrador named Coffee Beans attached to the Sheriff&#8217;s Department sniffing drugs and bombs. It&#8217;s about &#8220;the&#8221; coffee beans we are familiar with. It&#8217;s about the fragrant aroma that stimulates our senses in the morning. The tingling sensation we get when we take the first sip in the morning. How we manage to get an extra boost of energy whenever we feel tired and sleepy. Let us take some time to ponder the processes the coffee beans have to go through before it can be marketed.<br />
Processing The Coffee Beans After the coffee berries have been harvested, it needs to undergo a process where the flesh of the coffee berries is removed. The coffee berries are placed in special machines separating the flesh from the seed. This coffee seed is commonly called &#8220;coffee beans&#8221;. </p>
<p>The coffee beans will now undergo a fermentation process for a period of time. This process is done in order to remove the slimy mucilage coating the coffee beans.After the coffee beans have undergone the mandatory fermentation, they are thoroughly flushed with clean water. This process is to remove the foul smelling residue due to the fermentation process and the waste water is a main cause of pollutant. The coffee beans are then dried under the sun or by machines, until the moisture level is about 10% before they can be packed for storage.Another method of getting to the coffee beans without undergoing the fermentation process is to dry the whole berry in the sun. It normally takes about 10 to 14 days to complete the process with constant raking of the coffee beans to prevent mildew from forming. This method is popular and widely used by coffee producers where water is scarce. The dried flesh is then physically removed leaving only the coffee beans.The dried coffee beans is then sorted and graded before they can be stored or shipped to buyers. At this stage, the coffee bean is called green coffee beans.Sometimes the coffee beans will undergo an additional aging process. The reason for this is because when coffee was first introduced into Europe, the coffee beans have undergone a journey of about six months. Europeans have already developed a preference for this taste and therefore to simulate the taste, the coffee beans are further aged.Roasting The Coffee BeansRoasting is the final process the coffee beans have to undergo before they are commercially marketed. It is also possible to purchase un-roasted coffee beans that you can personally roast them yourself.When the coffee beans are subjected to heat, there&#8217;s a chemical reaction happening within the coffee beans where the sugar and acid will begin to react releasing its aroma. The coffee beans will turn darker due to caramelized sucrose. When this happens, the coffee beans are quickly cooled to prevent damage to the coffee beans.When roasting the green coffee beans, a lot of carbon dioxide is released as a by-product. The carbon dioxide helps to &#8220;seal&#8221; the coffee beans from loosing its flavor and aroma. Depending on how the coffee beans are stored, it may take some time before the optimum peak flavor. After reaching its peak, it will start loosing its flavor again.If you are trying to roast your own coffee beans at home, be aware that you may not be successful during the first few times. You might over-burn your coffee beans during your first few tries. Never be discouraged, but try until you get the taste and flavor that appeals to you. Remember to process in small amounts to maintain freshness of your coffee.Back in the mid-80s (yikes, was it really 20 years ago?), I was a young teacher working in New Orleans. To earn extra money, I worked part time across the street from my Magazine Street apartment, at PJ&#8217;s Coffee and Tea. Having grown up on instant Maxwell House, I was not the most coffee-savvy drinker in the world.In the days before Starbucks, before coffee houses became trendy and common, I learned the basics about roasting coffee beans and serving coffee from experts. I learned about coffee&#8217;s origins, roasting methods, and how to prepare the ultimate cup. In my opinion, the best cup of coffee can only be made with a French press, a glass carafe in which you mix ground coffee, boiling water, and use a simple plunger-press device to push the grounds to the bottom when you want to serve the coffee. This is the best way to make coffee because you don&#8217;t &#8220;cook&#8221; the coffee as you would in a drip machine. Cooking coffee releases its acidity and makes it bitter. I was so in love with my French press, I used to bring it on camping trips. There&#8217;s nothing quite like rolling out of your tent in the woods at dawn, wrapping your cold hands around a warm cup (not a paper cup, perish the thought!) and sipping slowly as you tend the fire for your morning breakfast.I might also argue that the cold drip method is up there with the French press. This method produces a coffee concentrate that you can keep in your fridge, but it&#8217;s slow and I believe best suited for iced coffee, which is how I learned it at PJs.Don&#8217;t get me wrong. I&#8217;m not anti-drip or anti-percolator. Heavens, no! For large scale convenience, there&#8217;s nothing like machinery. I own a drip coffee maker and a Krups cappucino/espresso maker and use them frequently. When I&#8217;m bolting out the door in the morning, I fill my metal thermal mug (never plastic, ick!) with a dark, rich French roast. If it&#8217;s a particularly good roast, I drink it black so as not to sully the flavor. If it&#8217;s mediocre or I&#8217;m just in the mood for light coffee, I use Half-and-Half. No sugar in my coffee, thank you. My husband uses skim milk which upsets me to no end because it produces a grayish colored murky coffee I find unappealling. But hey, he likes it and as long as he knows never to use skim milk in MY coffee, we&#8217;re cool.Now about those flavored coffees&#8230;I often take flack for this, but let me say I am vehemently opposed to flavored coffee. Coffee IS a flavor, so adding additional flavor to it is like adding ice cubes and club soda to a pricey bottle of merlot. How would you possibly appreciate the personality of a bottle of wine if you added extra stuff to it? You&#8217;d change the entire personality of something elegant and simple and make it complicated and confusing. With coffee, as with many foods and drinks, simplicity is elegant.Back in my coffee house days, we did not serve flavored coffees. We offered a dark roast, a medium roast, and a water-processed decaf to our customers along with an assortment of fresh baked goods, made from scratch by local bakers. We believed flavored coffees were just wrong because they covered up the true essence and beauty of the bean. Plus they weren&#8217;t popular then. I know they are popular now. The rows of syrupy flavors in bottles lined up in some coffee bars are testimony to the popularity of flavored coffee. I&#8217;ll pass, thank you.To eat or not to eat with coffee? <p>The growth of exports in the select coffee market, mainly to the United States, the increase in the sales price of export-quality coffee and the best differentials paid for our coffee in the primary world markets, are some of the successful results of implementing programs designed to achieve an increasingly higher quality bean.Why is Costa Rican coffee better? 100% of our coffee comes from the Arabica specie, the Caturra and Catuaí varieties, which produce a high quality bean and a cup with better organoleptic characteristics: pleasant, aromatic, and select. The planting of coffee Robusta has been prohibited by law since 1989 because of its inferior cup quality. In addition, the Catimores have stopped being cultivated, on a large scale, to preserve cup quality.Our coffee is grown in volcanic and low-acidic fertile soil, conditions ideal for production. </p>
<p>More than 80% of the coffee area is located between 800 and 1,600 meters (2,625 feet-5,250 feet) above sea level and in temperatures between 17 and 28ºC(62.6ºF-82.4ºF), with annual precipitation between 2,000 and 3,000 millimeters (79 inches-118 inches).In 2001, the National Coffee Institute, ICAFE, the sector&#8217;s representative, launched the National Coffee Plan with measures to improve the conditions in which coffee is produced, processed, and marketed.The advanced technology that the Costa Rican coffee producer has used for more than 200 years has allowed the plantations to adapt to the characteristics of each zone. Today Costa Rican coffee is grown in 8 production zones: Brunca, Turrialba, Tres Ríos, Orosi, Tarrazú, the Central and Western Valleys and Guanacaste. The manual and selective method of picking is used: only ripe berries are selected (at optimal ripeness); this allows the coffee to be more easily washed. Each Costa Rican coffee region signed a Quality Improvement Agreement in which the owners of the processing plants have committed to receive and process only ripe fruit, which guarantees better cup quality. The Costa Rican coffee sector only uses wet processing, in which the removal of the pulp is done the same day that it is harvested. Also, the classification and cleaning, after removing the pulp, is done before the fermenting process, with the idea of eliminating the remaining pulp and removing possible defective beans. The sun-dry method is used in the Costa Rican process, one of the more preferred systems of the demanding world markets; the process lasts 7 days. Mechanical drying is also used, which reduces the precise optimal drying time (12% humidity) to only 24 hours.As another display of Costa Rican coffee quality, the first tasting competition was organized in 2007, in which 10 best coffees were selected as winners. Three of them were selected by a panel of experts during the Cupping Pavilion competition of the Specialty Coffee Association of America.Differential payments also form part of these measures taken to achieve quality. Registration, verification, control and follow-up of the commercialization process of the bean with unique characteristics were established in order to stimulate production, processing, and commercialization of the highest quality of coffee.The processing firms that participate are committed to receiving, processing, drying, storing, and marketing the bean completely separate from the others processed conventionally as well as paying for it with differential payments with prices superior to those of conventional coffee. The price difference is significant.The goal of Costa Rica&#8217;s coffee growing sector is to continue improving bean sales while adhering to its strategy of &#8220;quality, not quantity&#8221;; to always provide increasing value to our coffee and to increasingly provide the local market with quality coffee.There are lots of myths and legends when it comes to the history of coffee. Many thought the cup of coffee to be very mysterious and this stimulating coffee found itself shrouded in mystery in the earlier days. One of the most popular legends is associated with a goatherd named Kaldi. One day, when Kaldi was with his herd of goats he noticed a sudden change in their behavior. The goats turned spirited and that was made Kaldi hunt for the probable reason. That was the time he viewed a wild coffee shrub and it dawned on him that his goats probably had eaten some cherries off this shrub. Curious, it led him to have a taste of the wild cherries himself. Compared to green tea and grape seed extract, green coffee bean extract is twice as effective in absorbing oxygen free radicals.One of the advantages of using the green coffee bean extract is that the negative effects of coffee are avoided. The chlorogenic acid is thought to boost metabolism by changing the way glucose is taken up by the body. </p>

<p style="text-align: justify;">It is not easy to ascertain who launches Saigon into the morning—the fixed of boundary between night and day is blurred. At 3 am, Saigon bars still serve quietly. At the same time, hawkers arrange their goods in the first hours of wholesale markets. In these are blue-collar workers starting their shifts beneath the glow of street lights. Saigon is waking up, but the city never fully went to sleep.</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">Who starts off the city’s day? The answer is elusive, perhaps hidden somewhere among the street sounds: vehicles, horns, and people selling newspapers in the street. </p>
<p>“But today’s newspaper! Thanh Nien! Tuoi Tre! Come buy today’s paper! “</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">Today is the same as everyday—a cup of black coffee. The difference is only the place. I am at a western-style café on the corner of Pasteur and Le Loi streets. A Valentine’s ballad by Martina McBride and Jim Brickman sounds out, making the street life suddenly a shade more romantic.</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">At 7:30 am, employees walk into government offices. Vehicles pack half of the street every time the traffic light turns red. I watch the commuters, who have long faces and jutting chins—typical Saigon faces. </p>
<p>They stop at the three-way crossroads when the traffic light turns yellow and then hurry forward when the red light changes to green after 45 seconds.</p>

<p style="text-align: justify;">“Please buy a lottery ticket! “a 10 year-old girl cries. Her accent is from Quang province; her choice is pure, as if she never knew about life in the dusty streets. It is a tenor note in this morning’s ballad.</p>

<p style="text-align: justify;">These are a foreign couple in white shirts and cream khaki trousers. The man holds the woman’s hand and they go to a nearby table, which has a good view of the street. The man has side-burns and puffs through a cigarette holder, gazing out at the street through the smoke. They call a street vendor and buy a colonial hat.</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">Three other men enter and choose a hidden corner in the coffee shop. They order coffee, tea and strawberry juice. They are about 60 years old. They start talking about Saigon in 1975—their accents sound like Vietnamese from overseas. They sit with a meditative look, chatting about Saigon streets and about the corner where they are now sitting.</p>

<p style="text-align: justify;">The men talk about the city Saigon once was before the names of streets were changed. Whoever war born and grew up in Saigon before 1975 knows the old names of streets, such as Green Tamarind Leaf Street.</p>

<p style="text-align: justify;">Bonard, which is now called Le Loi Street, is perpetually teeming with fashionable and wealthy young people walking and window shopping along the hot pavement.</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">Le Loi stretches towards the famous Ben Thanh Market to Catinat Road, which is now called Dong Khoi Street. The shops sell goods, such as Eagle batteries and Perlon toothpaste, aimed at middle class consumers.</p>

<p style="text-align: justify;">People roam around these areas, especially on weekends. The intent is not so much to buy as it is to experience—to see street life and walk arm in arm, talking together. There are many ice cream shops and restaurants, enticing passersby and a voyeuristic gaze at the beautiful young girls walking by.</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">Entheralled at the detailed memory of the 60 year-old man’s story, a younger man invites the Vietnamese from overseas to Napoli Bar on Pham Ngoc Thach Street. This popular bat is a nighttime venue where audiences listen to famous songs of an era passed—enlivening the street sounds with every performance.</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">Also on Pham Ngoc Thach Street, these are many fashion shops, trade centers, and souvenir shops. The most famous commercial center is of course Ben Thanh Market, a highly frequented tourist destination and known as the true heart of Saigon.</p>
<p style="text-align: justify;"> </p>
<p style="text-align: justify;">Saigon now; Saigon then, Saigon streets stir in the morning and soon explode into a symphony of activity: noises, smells, colors. Who woke Saigon up this morning, tipping her into another lively day? The answer, of course: who really knows?</p>
<p style="text-align: justify;">“I had a cup of black coffee” I say “The bill, please.”</p>

<p style="text-align: justify;">The bill is handed over, folded into a fake leather black folder. The number is more than a few thousand VND, as usual. But when I notice that the bill is 36,000, I am happily surprised. This is a lucky number to start the day.</p>
